Our modern lifestyle often involves cramming activities into every minute of every day. Preparing meals can feel overwhelming when there is so much to do. That's why I love simple, quick recipes that are packed with nutrients and flavor.
This easy tomato cucumber recipe can be made in about 5 minutes. It can be served immediately, or stored in the refrigerator for a day or two before serving. The quantities listed are slightly vague on purpose – so you can create according to your preferences and what you have in your pantry. Enjoy!
Ingredients:

Tomatoes, diced

Cucumbers, thinly sliced

Onion, thinly sliced

Basil, chiffonade
Dressing:

Olive oil
-
Vinegar (my favorites– white balsamic, white wine and apple cider vinegar)

Dash of Honey

Salt & Pepper to taste
Instructions:

Mix all vegetables.

Combine dressing ingredients and add to vegetable mixture.

Serve immediately or store in the refrigerator until ready to serve.
Notes:
I like to use equal parts tomatoes and cucumbers.
For the dressing, add slightly more olive oil than vinegar.
Other delicious additions you could try: garlic, peppers, dill, cilantro, feta cheese, olives, whatever sounds good!
