Not Your Mother’s Pesto: A CSA Greens Pasta Sauce from Your Farmer

When your CSA share is bursting with seasonal greens like rainbow chard, green onions, fresh lettuces, and tender pea shoots, it’s time to think beyond the salad bowl.

This easy, flavor-packed pasta sauce is our go-to for using up spring greens in a cozy, satisfying way. It’s pesto adjacent - bright, garlicky, and creamy, but swaps basil for whatever greens are in your farm share this week.

CSA Greens Pasta Sauce

Makes about 1 cup. Enough for ¾ lb pasta.

Ingredients

• 1 cup chopped rainbow chard (remove the stems)

• 1 cup mixed lettuces

• ½ cup pea shoots

• 2 green onions, chopped

• 1 clove garlic

• ¼ cup olive oil (plus more to taste)

• 2 tablespoons lemon juice

• ¼ cup grated Parmesan (or nutritional yeast for a dairy free option)

• Salt and pepper to taste

• A few tablespoons of pasta water to loosen if needed

Instructions

  1. Add all the greens, green onion, garlic, lemon juice, and cheese to a blender or food processor.

  2. With the motor running, slowly drizzle in olive oil until the sauce is smooth and spreadable.

  3. Season with salt and pepper. If the sauce feels too thick, stir in a splash of pasta water.

  4. Toss with warm pasta and serve immediately.

Try it with pan seared chicken, roasted veggies, or a soft boiled egg on top.
