A Flavor-Packed St. Patrick’s Day Meal

This simple yet flavor-packed recipe brings together herb-marinated lamb chops, buttery garlic mashed sweet potatoes, and smoky cabbage tossed with crispy bacon. It’s a perfect way to gather with loved ones and enjoy a meal that honors tradition while celebrating the best of the season.

Herbed Lamb Chops

Serves: 4 | Prep Time: 10-30 minutes | Cook Time: 10-15 minutes

Ingredients:

  • 4 bone-in lamb chops
  • 2 Tbsp. fresh rosemary, finely chopped
  • 1 Tbsp. garlic, minced
  • 2 tsp. dried thyme
  • ½ tsp. smoked paprika
  • ½ tsp. red pepper flakes (optional, for heat)
  • 1 tsp. red wine vinegar
  • 2 tsp. Worcestershire sauce
  • 2 Tbsp. olive oil
  • Salt & black pepper, to taste

Instructions:

  1. In a small bowl, mix the rosemary, garlic, thyme, smoked paprika, red pepper flakes, salt, pepper, vinegar, Worcestershire sauce, and enough olive oil to create a paste.
  2. Coat the lamb chops evenly and let them marinate for at least 10 minutes, up to 30.
  3. Heat a large skillet over medium-high heat. Add a light drizzle of oil.
  4. Sear lamb chops for about 4-5 minutes per side, until browned and cooked to desired doneness.
  5. Remove from the pan, cover loosely, and let rest while you make the pan sauce.

Simple Pan Sauce

Serves: 4 | Cook Time: 5-10 minutes

Ingredients:

  • Pan drippings from lamb chops
  • ¾ cup beef or chicken broth
  • ¼ cup dry white wine or red wine
  • 1 tsp. Dijon mustard (optional, for depth)

Instructions:

  1. Reduce heat to medium-low. Pour wine into the pan and deglaze, scraping up browned bits.
  2. Let it cook for a minute, then add the broth.
  3. Simmer until reduced to a slightly thickened sauce, about 5 minutes. Stir in Dijon mustard if using.
  4. Drizzle over rested lamb chops.

Garlic Mashed Sweet Potatoes

Serves: 4 | Prep Time: 5 minutes | Cook Time: 15-20 minutes

Ingredients:

  • 3 large sweet potatoes, peeled and cubed
  • 1 Tbsp. butter (or olive oil for dairy-free)
  • 1 Tbsp. garlic, minced
  • ¼ cup milk of choice (or more as needed)
  • Salt & black pepper, to taste
  • ½ tsp. smoked salt or a pinch of cayenne (optional, for depth)

Instructions:

  1. Place sweet potatoes in a pot and cover with water. Bring to a boil and cook until fork-tender, about 15 minutes.
  2. Drain and return to pot. Add butter, garlic, and milk. Mash until smooth.
  3. Season with salt, pepper, and smoked salt or cayenne if using.

Smoky Bacon Cabbage

Serves: 4 | Prep Time: 5 minutes | Cook Time: 15-20 minutes

Ingredients:

  • 1 small head cabbage, cored and quartered
  • 3 slices bacon, chopped
  • 1 tsp. whole peppercorns
  • Salt, to taste
  • ½ tsp. smoked paprika (for extra flavor)

Instructions:

  1. Place cabbage in a large pot and cover with water. Add a teaspoon of salt and the peppercorns.
  2. Bring to a boil and cook until tender, about 15 minutes. Drain and discard peppercorns.
  3. In a separate pan, cook the bacon until crispy. Add smoked paprika and stir.
  4. Shred the cabbage with two forks, toss with cooked bacon and its drippings. Season to taste.
